  • This work is focused on gelling properties of whey proteins. The aggregation and gelation of the pre-heated whey proteins could be either by heat treatment („heat-set“ gels) or by pH modification

  • měřením transmitance kyvety při působení odstředivé síly 4 000 ot./min po dobu 4 h 10 min. Následně byla vyhodnocena výška gelu v kyvetě před a po odstředění. U každé výroby byla provedena 2 paralelní měření.
